00:05 - we have been here for fifteen years and we have over twenty five different flavors

00:09 - and we make them all fresh every day right here at the fair

00:12 - so what we start with is our cake batter

00:16 - and we scoop them out you'll see throughout the process that we use ice cream scoops

00:21 - and that way it makes everything uniform so everyone

00:23 - gets the same amount of cake and the same amount of icing

00:26 - so once we have a lot of trays then we'll go ahead and put them in our ovens

00:32 - someone always has a timer going on to make sure that they all have the same

00:37 - consistency and none of them get burnt

00:39 - otherwise those it'll mess ups go to the side and

00:41 - we give those out to the workers that are here.

00:44 - We make our icing in this huge mixer right here

00:48 - each batch of icing is thirty two pounds of sugar.

00:52 - Whenever we have fillings all will specifically peanut

00:55 - butter butter cream use fifteen pounds of peanut butter

00:58 - every batch this fair alone we've been been

01:00 - through a hundred pounds of peanut butter so far

01:03 - so after we make the icing and all of the whoopie

01:05 - pie shells are cool then we'll come down here

01:08 - and we have an assembly line that will still the whoopie

01:11 - pies right now we are making chocolate peanut butter.

01:15 - So we have one person that flips them and one person that fills them

01:21 - and then you go back and then you top them.

01:27 - We go through so many whoopie pies that we have to have a very robust assembly line

01:31 - otherwise we'll never meet demand here

01:33 - so our wrapping system

01:35 - is this conveyor belt

01:37 - and it wraps forty eight will be pies at a time

01:56 - This machine is affectionately called Ethel a lot of people that come to the fair
