01:08 - the very first commercial locomotive in america ran

01:11 - right by where the

01:12 - brewery sits today

01:13 - and so everything about our brewery is based on the history honesdale is the

01:17 - birthplace of the American railroad

01:19 - so when you enter this building which was built by the railroad many years ago

01:22 - the experience is supposed to

01:24 - feel like you're going to go on a journey

01:26 - it feels like you're in a train station

01:27 - and all of our beers are designed to take you on a special journey

01:30 - and celebrate the rich history of the railroad

01:33 - Pennsylvania

01:34 - American history

01:35 - and Honesdale

01:36 - So come on in

01:37 - let's take a tour

01:44 - Welcome to the lounge area here at runaway train brewery

01:47 - is a great place when you come in off the chapel street entrance

01:50 - just have a beer relax if it's in the wintertime people like to sit by the fireplace

01:54 - and you can take a picture that kind of cozy environment there

01:57 - while you drink a locally craft brew

02:00 - everything in the brewery

02:01 - like i said is

02:02 - based around the trains all of our beers are train

02:05 - themed

02:05 - they have train themed names or travel

02:07 - themed names and

02:09 - everything on the beer cans

02:10 - represents something about history or train history of travel history

02:13 - you'll see.

02:15 - There's a lot of clocks a lot of gears

02:17 - lot of train artwork.

02:20 - Trains are about motion

02:21 - about being on a journey

02:23 - and we like to try to make sure you

02:24 - feel that way here the journey in this case is all the various craft beers

02:28 - and you get to have the craft beers

02:30 - right where history happened

02:31 - in eighteen twenty nine

02:33 - where the stourbridge lion

02:34 - the very first commercial locomotive

02:36 - steamed down the tracks

02:38 - located right outside our brewery.

02:40 - That brings us into the bar area

02:45 - of a beautiful bar

02:47 - designed to handle a lot of people

02:49 - we also have a full menu here

02:50 - and each of the items on our menu are designed to

02:53 - pair with the various beers we make and we serve here

02:56 - so when you look at the drink menu it'll show you the various craft beers

03:00 - what type of beer they are

03:01 - a little history behind the beer

03:03 - tells you what recommended item on the menu might go best with that beer

03:07 - and

03:09 - we're going to enter our dining car

03:11 - this room.

03:13 - Has the ability to close off for a private space of about thirty people

03:16 - and.

03:18 - It's a little bit more of a

03:19 - of a private place meetings corporate events.

03:23 - We have a larger event space upstairs it will

03:25 - see in a minute that can handle people

03:27 - crowds up to one hundred

03:29 - but this area is designed to be quiet if you need it to be

03:32 - or it's close to the bar so when our barn doors are open.

03:35 - It keeps you

03:36 - in the middle of the action as well we have some soft seating

03:39 - here to

03:40 - relax

03:41 - the whole point here is we want to have something for everybody this venue is

03:44 - family friendly

03:45 - we have an outdoor dining patio it is also

03:47 - pet friendly

03:48 - and

03:49 - try to make sure it's experience for everybody we have a game room upstairs

03:52 - so you can shoot free pool

03:54 - darts

03:55 - shuffleboard cornhole video games

03:58 - and

03:59 - like i said a little bit of

04:00 - something for everybody

04:02 - with that let's go take a look upstairs.

04:12 - welcome come upstairs at the runaway train brewery my name's Justin Genzlinger

04:16 - i'm one of the partners here at the brewery

04:18 - and ceo of settlers hospitality who

04:21 - manages the taproom.

04:23 - I wanted to tell you a little bit about what

04:24 - we do upstairs at the brewery we have some

04:26 - games where everyone could play pool shoot darts

04:30 - we have some gaming

04:31 - lounge seats and most importantly it's all free

04:34 - for our guests to enjoy and then in this room here

04:37 - we tend to do.

04:38 - Private parties.

04:40 - It can be as casual as cornhole tournaments

04:43 - or fundraisers for nonprofits

04:45 - birthday parties

04:46 - but we try and make it a fun catering

04:48 - casual catering

04:49 - space

04:50 - for private parties

04:52 - okay this room we have a small private dining room

04:54 - also acts as the service bar for bigger parties

04:58 - one day

04:59 - there may be a different type of state where you grab your favorite cigar

05:03 - as a cigar lounge

05:04 - what i'd really like you to do

05:05 - now is meet Greg

05:07 - who's going to show you how the declaration lager is actually made at the brew house

05:20 - hi my name is Greg Pollock

05:22 - runaway train brewing

05:23 - company in Honesdale

05:24 - managing partner

05:26 - i'm here to talk about beer

05:27 - and keep it very simple

05:28 - we all love beer.

05:30 - What we make here it is just

05:32 - about taking different grains

05:34 - and

05:34 - milling them up and then boiling them in hot water for a period of time

05:38 - depending on the beer.

05:40 - We will use different grains and malts to get the colors and

05:43 - flavors that we're looking for

05:45 - after we boil that.

05:47 - Will take all the liquid out will put it another container called the oil kettle

05:52 - and that's where we'll add all the

05:53 - flavorings hops.

05:56 - Fruits

05:57 - and will boil it again for a little bit longer to get

06:00 - the desire flavor and color that we're looking for

06:02 - then after that we're going to move it into a fermenting tank

06:05 - and that's where we add the yeast at that point it starts to become alcohol

06:11 - and beer

06:12 - the yeast

06:13 - eating the sugars

06:14 - creates the alcohol

06:16 - and that creates the beer

06:18 - and depending on what

06:19 - beer we're making it can take anywhere from.

06:23 - Two three weeks to.

06:25 - Two three months

06:27 - so let's show you where the magic happens back here

06:29 - this is the brewhouse here runaway train brewing company

06:32 - and it's

06:34 - very simple process

06:36 - we have a mash tun right here

06:38 - and that is where the grains are going to.

06:42 - Mix with water for the first time and you can see

06:46 - we just

06:47 - did some.

06:49 - Brewing yesterday

06:50 - so this is where the water

06:52 - grains mix it'll stir around

06:54 - about an hour an hour and a half an all we're trying to do

06:57 - is extract again the flavors

06:59 - and a sugars from the grain

07:01 - once that's all done

07:03 - we're going to pump it through all these elaborate pumps and site glasses was

07:08 - the first time we'll get to see what the

07:09 - beer is going to look like

07:11 - and then it's going to go into this tank up here.

07:15 - called a boil kettle

07:17 - and that's where we're going to add the flavors the hops the fruits

07:22 - the various

07:23 - flavor profiles for that whatever beer we're making

07:26 - and that'll be another hour hour and a half so the total brew day

07:30 - is probably four

07:31 - five hours

07:33 - to do a batch of beer.

07:36 - Once it comes out of there

07:37 - we have to chill it down to a certain temperature.

07:41 - Certain beers use different types of yeast

07:44 - different types of yeast operate at different temperatures

07:47 - too cold it doesn't activate too hot it kills it

07:50 - and

07:50 - yeast are.

07:52 - Critical that's what turns the sugars into alcohol

07:55 - and so we need

07:56 - for them to be happy

07:58 - so we had to take them through this chiller over here.

08:01 - In this is designed to take that hot water.

08:05 - All the way down to the desired temperature that we want for that particular beer.

08:10 - And then we pump it

08:11 - into these tanks in the back over here

08:14 - if you follow me around the back this is really where the magic happens over here.

08:22 - We'll pump the beer into these tanks

08:25 - and this is where we'll add the

08:28 - yeast to it

08:29 - every tank is exactly temperature control

08:32 - that allows us

08:35 - to set it at the

08:36 - desired temperature for that yeast

08:38 - but also allows us

08:40 - to replicate our beers

08:42 - perfectly from

08:43 - batch to batch.

08:46 - Temperature control is everything.

08:48 - We also don't filter our beer

08:50 - all natural filters so you see these tanks or conical shaped.

08:54 - So all the sediment

08:55 - will fall to the bottom

08:57 - and we will pull that off there but we'll actually pull the beer off here

09:00 - so it's all naturally filtered

09:04 - Once that's done

09:05 - we will talk about declaration which is why

09:07 - we're here today to celebrate that exciting beer

09:10 - for Pennsylvania's two hundred fiftieth birthday next year.

09:14 - So declaration is a lager

09:16 - once

09:17 - the declaration or any lager spends some time in these tanks

09:21 - and we get to the desired

09:24 - alcoholic level

09:26 - for declaration that's a four percent year

09:28 - nice easy drinking crisp lager

09:30 - we put it in this tank

09:32 - for.

09:34 - A period of another week two three

09:38 - quite honestly the longer you leave a lager in here

09:40 - the clearer it'll get

09:41 - the crisper it'll get

09:43 - So.

09:44 - Our declaration is a six

09:46 - week

09:46 - beer

09:47 - on average from

09:49 - time we.

09:50 - Mill

09:50 - and drop to

09:51 - the time we actually

09:52 - can it off

09:53 - we just canned this off

09:56 - last week.

09:57 - Actually on Monday so it's very fresh what we have here

10:00 - at the brewery

10:01 - is on tap declaration

10:03 - we have a

10:04 - copy of it over here.

10:06 - So this is our table where we do some in-house canning for declaration we do offsite

10:11 - we bring a mobile Canner in and will literally can off hundreds of cans of beer

10:15 - this is what the beer looks like.

10:18 - Right here.

10:20 - Declaration very light

10:21 - easy drinking crisp lager again four percent alcohol content

10:26 - so you can have a few of these

10:28 - kind of a long day you're on your boat you're at a concert

10:32 - celebrating america two fifty

10:34 - you could have a few of these

10:36 - our slogan for declaration

10:38 - is Liberty and lager for all.

10:41 - Cheers.

10:47 - okay so as you know we are the home of the official america250PA beer

10:52 - and that's what we're here to talk about

10:54 - ultimately.

10:55 - This is the

10:56 - this is the label that was designed in collaboration with america250PA

11:01 - there's a lot of symbolism in here that is just extraordinary the goal here was to

11:06 - make sure we captured the spirit of seventeen seventy six

11:09 - but also we bring forward and incorporate everything about Pennsylvania that we can

11:13 - to represent this the commonwealth

11:15 - and so what you see here is

11:16 - declaration lager

11:18 - of course the words declaration are an exact match

11:21 - of the declaration of independence

11:23 - how it was handwritten

11:24 - in seventeen seventy six.

11:27 - Also you see a silhouette of the founding fathers.

11:30 - They're holding a scroll

11:31 - which is emblematic of the declaration of independence they're making an announcement

11:35 - there are also looking forward they're looking to the future

11:38 - but there are supported

11:39 - by the keystone state Pennsylvania

11:41 - underneath them is a map of Pennsylvania show some of our significant rivers.

11:46 - You also have a towering

11:48 - independence hall where it all happened

11:50 - all the ingredients in

11:52 - this beer

11:53 - are

11:53 - Pennsylvania ingredients so we proudly display the pa preferred logo

11:57 - and seal

11:58 - of course this is done to support america250PA so we

12:01 - have the america250PA logo as well as their slogan

12:06 - start here. america did.

12:08 - I also like to point out

12:09 - the slogan for the beer which is Liberty and lager for all

12:13 - it truly is this type of beer it is an

12:15 - easy drinking

12:16 - lager it's made for the people.

12:20 - Also

12:21 - the color scheme is obviously red white and blue

12:23 - but the declaration sits in a field of blue representing clear skies and optimistic

12:28 - future so two hundred and fifty years later it's a muscular design it's meant to

12:33 - show strength is something would have to be strong

12:35 - to last and endure for two hundred and fifty years.

12:38 - Perhaps my favorite part of it it.

12:40 - Is it's frame.

12:42 - So there is a frame

12:44 - around the.

12:45 - Around the logo in the label

12:47 - that is a parchment color frame

12:50 - similar to the parchment color of the declaration

12:52 - of independence and all of the sixty seven counties

12:56 - of Pennsylvania are listed in the frame

12:59 - so no matter in twenty twenty six no matter where you are drinking this beer

13:03 - your hometown county

13:04 - is represented and of course

13:07 - Pennsylvania is a great state because of the contributions of all of the people in

13:10 - the state it's great history and all the counties.

13:14 - Some smaller easter egg details that i like to point out

13:17 - being that Pennsylvania the keystone state

13:20 - we have the keystone a keystone logo very

13:22 - subtly

13:23 - represented

13:24 - there we also have a keystone located at each corner.

13:28 - Of the label

13:30 - some other easter eggs that are lesser known

13:32 - the printed font.

13:34 - In the logo

13:36 - is actually a replica of the original dunlop broadside

13:40 - print

13:41 - that was the first printing of the declaration of independence by John dunlop.

13:45 - On the night of July four seventeen seventy six

13:48 - so

13:49 - everybody's familiar with the hand written version that the iconic one

13:52 - but the printed version

13:53 - that was distributed throughout Pennsylvania is how most

13:56 - Pennsylvanians at the time

13:58 - first

13:58 - learned about

14:00 - and read the declaration of independence in seventeen seventy six

14:03 - all of our artwork and for all of our beers really

14:08 - dig into symbolism

14:09 - and we will show you some additional artwork over here

14:11 - done by the same designer as the america250PA declaration label

14:20 - so this artwork i like to describe as
